Roasted Pumpkin with Chia Seeds
Chia seeds add a wonderful crunch to roasted pumpkin or squash. A perfect side with roast meats or vegetarian dishes. Also, great served cold in a salad.
½ Medium Pumpkin or Squash
2 tbsp Olive Oil
2 tbsp Chia Seeds
Salt & Pepper to taste
1 tbsp honey (optional)
Line an oven tray with baking paper. Preheat oven to 350º. Cut ½ medium pumpkin/squash into ½ inch, half-moon shape pieces (leaving skin on). Brush with olive oil, place on tray and generously sprinkle with salt, pepper and 2 tbsp of Chia seeds. Roast for 30 minutes or until tender. Remove and serve immediately drizzled with honey (optional).
