Chia Mixed Berries and Nuts

Add crunch to your day with this simple recipe. Prepare the night before for a quick and easy brekkie or snack.

Ingredients 

⅔ cup white Chia seeds
2 cups soy milk
½ cup honey
1tsp vanilla bean paste
100g strawberries, sliced
100g blueberries
100g raspberries
50g slivered almonds, toasted
50g pistachios
100g natural yoghurt
100g honey

Method 

Place Chia seeds in a large bowl along with the soy, honey and vanilla. Place in the fridge, cover and leave to soak for 3 - 4 hours. Once soaked, place the Chia mix into serving bowls. Top with berries, nuts, yoghurt and drizzle with honey. Enjoy!
