Cheeky chia rice pudding (also gluten free)
Delicious pudding to share with family and friends.
½ cup (100g) medium grain white rice or arborio
900 millilitres full cream milk (lactose free if desired)
1 tbsp raw sugar
⅓ cup (50g) sultanas
2 tbsp chia seeds
½ vanilla bean split length ways
In a medium size saucepan add the rice, sugar, sultanas, Chia seeds and milk. Scrape the inside of the split vanilla bean with a butter knife and add to the saucepan along with the vanilla bean. Slowly bring the saucepan to the boil, stirring occasionally. Then reduce to a gentle simmer and cover the saucepan with a lid. Cook for a further 30 minutes stirring occasionally. Once cooked, remove lid and gently stir the rice pudding. Allow the pudding to rest for 10 minutes before serving. This pudding may be served warm or cold. This recipe makes enough for the whole family and is best eaten on the day however it may be stored in the fridge for 1 day.
