Cauliflower, amaranth and chia mash (also gluten free)

Great for entertaining be it for lunch or dinner with family and friends.

Ingredients 

½ cup amaranth grain, rinsed
500g cauliflower, trimmed and cut into florets
2 tbs Chia seeds Sea salt
Cracked black pepper

Method 

Place the amaranth in a pan with 1¼ cups of water and bring the liquid to the boil. Reduce the heat to simmer, cover the pan and cook on a low heat for 18–20 minutes. Steam cauliflowers until it is tender, then, blend in a food processor until smooth. Mix cooked amaranth, cauliflower with Chia seeds and season with a pinch of sea salt and cracked black pepper.
